Culinary Experience at 1919 Restaurant in San Juan Puerto Rico

As part of the Guest Chef Event Series at the Condado Vanderbilt, Chef Jose Antonio Gonzalez and Chef Roberto Terradillos will be presenting a menu at the 1919 restaurant from June 8-11 that promises to tantalize and excite. These two well renowned chefs will be bringing the rich, vibrant flavors of Spain to the finest luxury hotel in Puerto Rico for an unsurpassable culinary experience.

Jose Antonio Gonzalez of El Nuevo Molino Restaurant began cooking at 20 years old after being pressured into the job by his two uncles, one of which was a professor of Hospitality and the other, a restaurateur. What started as a job, quickly escalated into a passion. As time went on, Gonzalez strived to continuously learn more and grow as a chef. His undeniable fervor presents itself in each dish, with his dedication to detail and his selection of perfect produce.

Roberto Terradillos of El Serbal Restaurant has recently been making local cuisine based on his own studies and innovation with products of Castile and Leon. Throughout his career he has been perfecting the creative process, while serving exquisite dishes and winning highly sought after awards. He brings his experience from multiple Michelin-star rated locations along with skills acquired through various restaurants in countries such as England and Spain.

These two chefs bring their undeniable creativity, remarkable talent, and coveted Michelin stars to the 1919 restaurant. The menu exhibits a fusion of gastronomic innovation combined with classic flavors and top quality products.

The menu includes Salzon de Trucha and the fish is a “Buche de Bacalao”, a cod with pancetta, organic tomatoes, and basil. Following that is a Crema de Cocido Lebaniego, a traditional Spanish dish of meats, chickpeas, and soup. Following that is lamb loin, served as caramelized ribs with spelt and an herb pesto. The dessert course includes a local tarragon panna cotta, adorned with candied citrus, garden flowers, and crispy quinoa, as well as an avocado texture with passion fruit.
